we’re down in texas right now for the C3 Conference and its feeding my love for barbecue. so how about a healthier version with a mexi twist?

i give you…..smoked adobo pork tenderloin.
its flavorful, its juicy, its spicy, its delicious.
add a side of brown rice mixed with a little lime juice and chopped cilantro and a side of sautéed black beans, seasoned with cumin, chili powder and a dash of lime juice and you have yourself a clean, delish dinner.

so here’s what you need:

18-22oz pork tenderloin
1tbs cumin
1tsp fennel seeds
1tsp ground mustard
2tsp oregano
1/2tsp onion powder
1/2tsp garlic powder
1tsp smoked paprika
1tsp chili powder

mix all of the spices together and rub them all over the tenderloin. you can even cut a few slits in it and stuff some of the rub in there as well. you want to cover every inch, nook and cranny with it.
turn up your grill and put the pork on there. sear each side of it at a high heat and then reduce the heat and cook until desired doneness. (i prefer my pork medium).
let it sit for a few minutes before slicing.

i’m telling you, the juices that will come from this pork will blow your mind!
