Happy Monday y’all!  Today I’m sharing an easy weeknight dinner that you can throw right on the grill in these lovely temps we’ve been having lately!  This is a lighter dish with a little kick of spice, but don’t fear bc the cucumber salsa balances it out.  Don’t worry, I won’t be one of those food bloggers that gives you some long, drawn out story before sharing the recipe.  Here it is!

Grilled Chicken Thighs with Cucumber Salsa

Ingredients

Chicken:
8 boneless, skinless chicken thighs
2tsp ancho chile pepper powder (you can sub with regular chili powder)
2tsp cumin
1 lime, juiced
1tsp grate lime zest
salt and pepper

Salsa:
2 cups cucumber, diced
1 cup red bell pepper, diced
1 avocado, cut into small chunks
2tbs cilantro, chopped
1 lime, juiced

Combine cucumber, red pepper, avocado, cilantro and lime juice in a bowl and chill until chicken is ready.

Mix all of your seasonings together and rub on chicken then drizzle with lime juice.

Cook chicken on grill over medium heat for about 5minutes each side or until cooked through.

Place chicken on plate and top with salsa – easy peasy!

We have this with some sort of grilled vegetable and its great over cauliflower rice (low carb option), some quinoa or with a baked potato on the side!
