We’re slowly getting back into the routine of school so meal plans really help keep me on track! So here’s what we’re eating this week:
Monday: Steak, Roasted Sweet Potatoes and Green Beans
Steak Marinade HERE
Roasted Sweet Potatoes: Peel and cube 3-4 sweet potatoes. Toss in 1/4 cup olive oil, 3-4 cloves crushed garlic, sea salt, pepper and 2tbs choppped rosemary. Roast in oven at 425 for 35 minutes.
Tuesday: Pork Carnitas with Cilantro Lime Rice and Salad
