Remember how I shared about my new air fryer a few weeks back?? Well, imagine my surprise and excitement when the Instant Pot company reached out to me asking if I would try out their newest Instant Pot Duo Crisp + Air Fryer!! Guys, I STILL can’t believe it and am over the moon! So this week, I’m doing a whole week of recipes using it so I can not only give you a full review next Monday, but also gift one of you an Instant Pot Duo Crisp + Air Fryer as well! I KNOWWWWW, so freakin excited! More to come on that, but for today, I’m sharing My FIRST Instant Pot Recipe EVER!

It was cold and rainy yesterday, so I decided it was the perfect day for some soup, more specifically New England Clam Chowder! I looooove me some chowder and really missed Chowderfest down in LBI this year (Dang COVID!), so I made my own! Chowder is actually not THAT hard to make, its just a LOT of chopping! And now I can confidently say, its SO easy to make in the Instant Pot!

SO here is my recipe for Instant Pot New England Clam Chowder:

Ingredients:

6 slices uncooked bacon, chopped
1 onion, diced
2 carrots, peeled and diced
3 stalks celery, diced
3 medium potatoes, peeled and diced
4-6 cloves garlic, minced
1 cup chicken broth
1 cup clam juice
salt and pepper – I did like a tsp of each?
Old Bay seasoning – I love Old Bay so I added a bunch
fresh thyme – I used like 1tbs of the leaves
2 bay leaves
1 cup heavy cream
2tbs flour
2 cans minced clams with juice

Directions:

Set Instant Pot to “Saute > High” and add bacon to pot once heated. Stir bacon so it doesn’t stick to the bottom of the pot until just cooked, not crispy.

Add onion, carrots, celery, potatoes, garlic, chicken broth, clam juice, juice from canned clams (set minced clams aside for this part), salt and pepper, Old Bay, thyme and bay leaves to pot. Close Instant Pot lid and set to Pressure Cook for 15 minutes.

Once finished, do a quick release and reset the Instant Pot to “Saute > Low”

In a small bowl, whisk heavy cream and flour and add to pot. Stir to combine and cook 5-7 minutes so it thickens slightly. Stir in clams and turn off pot.

Serve with crusty bread and enjoy! Mike ate THREE bowls of this for dinner and I’m currently eating it reheated for lunch and its just as good the next day!
