Another week, another meal plan!
Coming off of Valentine’s Weekend, I need simple meals and slow cooker meals so that’s what this week’s meal plan consists of!
Monday: Spicy Pork Brussels Bowls

Tuesday: Drunken Shrimp with Gluten-Free Bread
Wednesday: Roasted Chicken Thighs with Air Fryer Sweet Potatoes and Sugar Snap Peas

Air Fryer Sweet Potatoes: cube sweet potatoes and toss in olive oil, sea salt, pepper, minced garlic and chopped rosemary. Cook in the air fryer at 400 for 20-25 minutes.
Thursday: Crockpot Pernil, Rice & Beans and Salad
Friday: Garlic Roast Beef, InstantPot Mashed Potatoes and Green Beans

IP Mashed Potatoes: place metal trivet into InstantPot and add a cup of water and some salt to the bottom of the pot. Add 7-8 medium potatoes (peeled and quartered) over the trivet. Cook on high pressure for 10 minutes and quick release. Remove trivet and add 1 cup warm milk, a few tbs of butter, salt and pepper and whip potatoes with hand mixer.
