We’re headed into our last week of E2M and let me tell you, we would NOT have survived these eight weeks without these Cashew Crusted Chicken Cutlets! Chicken Cutlets are the top requested dinner in our house, my boys love them so when we had to cut carbs from our diet, I HAD to find a replacement. Y’all, these are THAT good, but I’m gonna share a few tricks with you about these that will make them look and taste identical to the real thing. So if you’re doing E2M, Whole30, Keto, whatever, these are a must for your weekly meal plan!

Ingredients:

2lbs chicken breasts, trimmed and pounded thin
2 cups ground cashews
4 eggs, beaten
Seasonings: salt, pepper, paprika, italian seasoning, onion powder and garlic powder
EVOO or Avocado Oil Spray

Directions:

Trim and pound out chicken breasts until thin and season with salt and pepper.

In one dish, beat 4 eggs and season with salt and pepper.

For the Cashew “Breadcrumbs,” add about a 1/2 cup of cashews at a time to a food processor then sift into a dish. The sifting is important or else your “breadcrumbs” will be lumpy and won’t stick well. Repeat until you’ve ground and sifted all of the cashews. Season ground cashews with salt, pepper, paprika, oregano, onion powder and garlic powder. (Don’t add olive oil to the mixture like I do my regular chicken cutlets. It will make the mixture clump)

Dredge chicken in eggs then the cashew “breadcrumbs”.

Preheat air fryer to 400. Spray the air fryer with olive oil (or avocado oil) and add chicken. Cook for about 15-20 minutes. Mike and Chase like theirs well done so I’ll do the full 20 minutes for them, but they should be cooked through around the 15 minute mark.

Serve immediately and enjoy!
