Well, well, well… here we are in the middle of total and complete chaos. Maybe that sounds a little dramatic, but at this point, we’re on a Stay At Home order in the state of New Jersey and it’s all just very…. different. With staying home 24/7 except to hit the grocery store, I have been cooking nonstop bc what else is there really to do! I figured I’d share my Meal Plan with you to help you during this time when some of us might not know where to begin! Some of the recipes are from other websites, some are my own, but its a lot of comfort food so definitely don’t try calculating calories on this lineup! If you are ever looking for some new recipes, I’m always updating my Pinterest Board with some new meals so definitely give it a follow!
Here’s some recipes we’ve had lately:
Sheet Pan Breaded Pork Chops, Scalloped Potatoes + Green Beans

I make these potatoes
I use frozen green beans and just season with butter, salt and pepper
Shrimp + Sausage Sheet Pan with Garlic Parsley Potatoes + Asparagus

Garlic Parsley Potatoes:
Boil mini red potatoes until cooked through. Rough chop the potatoes, add 1/2 stick of butter, salt, pepper, garlic powder and chopped parsley and mix together. These are my FAVE!
Meatloaf, Mashed Potatoes, Broccoli + Biscuits
I actually use THIS for my meatloaf and follow the directions on the packet, but I add additional seasonings
Mashed Potatoes:
Boil peeled potatoes until cooked through. Add 1/2 cup milk (to start), 1/2 stick of butter, salt and pepper and beat with electric mixer until smooth. (add enough milk to make creamy)
I use frozen broccoli and just season with butter, salt and pepper
I use these biscuits
Fried Chicken, Homemade Mac & Cheese + Sugar Snap Peas
Fried Chicken Recipe HERE
Macaroni & Cheese:
Preheat oven to 400 and boil elbow macaroni acc to package directions.
Melt 3tbs butter over medium heat and whisk in 1/2 cup flour once melted
Stir in 4 cups of whole milk gradually and season with salt and pepper
Stir in 3 cups shredded sharp yellow cheddar and 1 cup shredded mozzarella gradually and stir until melted
Add cheese sauce to cooked pasta and stir to combine
Pour into greased 13×9 dish and top with panko, 1 cup shredded cheddar, italian seasoning and pepper
Bake for 25 minutes
I use frozen sugar snap peas and just season with butter, salt and pepper
Spaghetti + Sausage with Garlic Bread
