Almost a month has passed since we went into quarantine and I’m still cooking up a storm over here! As always, some of the recipes are from other websites and some are my own and if you are ever looking for some new recipes, I’m always updating my Pinterest Board with some new meals so definitely give it a follow!
Here’s what we’ve been eating lately:
Steak & Bacon Wrapped Shrimp with Baked Potatoes and Broccoli
Steak: I love a medium rare London Broil – SO good! I simply seasoned the london broil with salt, pepper, garlic powder and onion powder. Our grill bit the dust, so I cooked it under the broiler at 500 degrees until desired doneness. Let sit for about 10mins before serving.
Bacon Wrapped Shrimp: I get the frozen RAW peeled and deveined shrimp at Aldi and let them thaw out. Cook 5-6 strips of bacon in the microwave for about 5 minutes and cut into thirds. Wrap bacon around shrimp and place on baking sheet lined in foil. Cook at 400 degrees for about 5 minutes or until shrimp start getting pink. Brush BBQ sauce (I use Sweet Baby Ray’s) on shrimp and cook another 5 mins. Brush again with BBQ sauce and cook under broiler for a few mins – sauce will begin to bubble. The boys freakin LOVED these!
Baked Potatoes: I scrub my potatoes, poke a ton of holes in each one with a fork and cook in microwave on potato setting. When done, sprinkle each potato with sea salt and wrap in foil.
Broccoli: I use frozen broccoli and just season with butter, salt and pepper
Sweet & Spicy Pork with Mango Salsa over Cauliflower Rice

This was SOOOOO freakin good! Def a good mix of sweet and spicy! I served it over cauliflower rice – just the frozen kind and seasoned it with salt and pepper.

Fish & Chips
Fish: Recipe from How To Feed A Loon
Fries: I made my own homemade fries with this one as I prefer to bake them over frying. I take 3 potatoes and scrub them well. Slice potatoes into “fries” (with skin on). Line a baking sheet with foil and spray with olive oil. Spread a single layer of fries on sheet and drizzle with olive oil and toss with hands to coat evenly. Bake at 400 for 15mins, flip and then bake for another 10-15mins or until brown and crispy. Season with sea salt, fresh cracked pepper, garlic powder and chopped parsley.
Mediterranean Grilled Chicken with Dill Greek Yogurt Sauce, Lemon Potatoes & Greek Salad

Potatoes: Recipe adapted from The Mediterranean Dish
Salad: I just added chopped tomatoes, cucumbers, green onions, parsley and banana peppers to a bagged garden salad and served feta on the side for whoever likes it – our house is divided on this one.
Dressing: I combined about a 1/3 cup olive oil, juice of 2 limes, salt, pepper, a pinch of cinnamon and a dash of allspice. Mix well and drizzle on salad!
BBQ Chicken & Polenta Bowls
Recipe adapted from Half Baked Harvest
Chicken: I take 2 large chicken breasts, trim the fat and cut width-wise (does that make sense?) to make 4 thinner breasts. In a small bowl, mix 3tbs olive oil, 1tbs paprika, 1tsp cumin, 1tsp pepper and 1/2 tsp cayenne pepper. Sprinkle both sides of chicken with sea salt then rub seasoning mix on both sides of chicken and let sit for a few minutes. Cook chicken under broiler at 500 until done – about 10-15mins each side usually for my oven. Brush with BBQ sauce on each side while cooking.
Asparagus: Trim ends of asparagus and spread single layer on foil-lined baking sheet. Drizzle with olive oil as well as some salt, pepper, garlic powder, italian seasoning and red pepper flakes. Toss with your hands to coat evenly. Roast in oven at 375 for about 20 minutes.
Polenta Cakes: I just bought a tube of polenta (in the pasta aisle) and sliced it into 1/2in rounds. I put them in the air fryer at 370 for 12 mins, flipping halfway. Season with fresh cracked pepper.
Greens: You can use any greens, but I did baby arugula. Super simple here, just drizzle with fresh lemon juice, sea salt and fresh cracked pepper.
Assemble as you wish, in a bowl or on a plate!
