So I’m totally becoming the kinda gal that just looks for an excuse to celebrate and bake delicious treats and I’m not mad at it one bit! I am actually Irish so celebrating St. Patrick’s Day is not out of the question. In fact, the town my sister lives in usually does a big St. Patrick’s Day Parade and they throw a big party, but…. COVID. So instead, I decided to bake a bunch of treats this weekend, craft them into a charcuterie board and had a little photo shoot! (You’ve gotta check my Instagram for a video of the whole spread)
So if you put together an Occasions Bin for St. Patrick’s Day, here’s some goodies to put those adorable plates and napkins on!

**Feel free to add a Green Milkshake on the side for fun!**
You could add any other festive treats or candies to go along with the board! I had a hard time finding swirl lollipops, so I added the ONE I was able to find as decor on the side along with some gold coin confetti and Lucky Charms-esque marshmallows! For the candy coated pretzels, I just melted some green candy meltables and dipped the pretzels in it – easy peasy!
I bought everything seen here from my local grocery store, Party City, Amazon and the Dollar Tree.
Lucky Charms Treats
9 cups Lucky Charms cereal
10oz bag mini marshmallows
1/2 stick butter
Heat butter in large pot over medium-low heat. Add marshmallows and mix into butter, stirring until marshmallows liquify. Pour cereal into pot and mix until fully combined. Spread into greased 13×9 dish or cookie sheet. Press down until evenly spread out. Let sit to cool. Cut with a shamrock cookie cutter or into squares.
Lucky Charms Cookies
Adapted from Simply Whisked
1 1/4 cups all-purpose flour
1 teaspoon cream of tartar
1/2 teaspoon baking soda
1/4 teaspoon coarse salt
1/2 cup sugar
1/2 cup butter
1 egg
1 teaspoon vanilla extract
1 cup Lucky Charms marshmallows + extra for garnish
Preheat oven to 350˚F and line a baking sheet with parchment paper.
In a medium bowl, whisk together the flour, baking soda, cream of tartar and salt. Set aside. In a large bowl with a mixer, beat the butter and sugar until light and fluffy. Add egg and vanilla, beating until each has been incorporated. Add in half the flour mixture and beat until combined. Do the same with the rest of the flour mixture. Continue to mix until it forms a dough. Stir in marshmallows. Scoop cookies onto cookie sheet. I used a medium-sized ice cream scoop.
Bake for 12-14 minutes or until the begin to turn golden. Remove from oven and press additional marshmallows into the tops while cookies are still warm. Move to cooling rack for a few minutes.
