Yup, we’re at nine weeks in quarantine and I’m still cooking away! Luckily, the weather has started to warm up some so we’ll be using the grill more which makes for easy dinners! I just love throwing some steaks or chicken on the grill – nothing better! So rather than me blab away, here’s this week’s meal plan:
Monday: Chicken Fajitas
Slice up some onions and peppers and saute over med-high heat in olive oil for about 5 minutes. Cut chicken breasts into strips and season with salt, pepper, garlic powder, cumin and chili powder. Add to pan and saute until cooked through. Heat up some tortillas in the microwave and serve! We like to garnish our fajitas with sour cream, guacamole, shredded cheese, pico de gallo, lettuce and jalapenos.
Tuesday: Cheesesteak Casserole

Wednesday: Burgers & Dogs on the Grill with Pasta Salad, Corn on the Cob, Salad and Watermelon Slices
Burgers: I make my own burgers with ground beef and here’s what I’ll usually do:
Put ground beef in a bowl and season with salt, pepper, onion powder, paprika and oregano as well as some minced garlic and a little bit of breadcrumbs. Mix together well, form into patties and grill to desired doneness.
Pasta Salad: Boil rotini pasta per pkg directions and then run under cold water to cool it – I like to use tri-color rotini. Grab some veggies out of your fridge and chop em up: broccoli, cucumbers, peppers, tomatoes, onions. I also add pepperoni, cubed cheddar cheese and some locatelli. Prepare an enveloped of the dry italian seasoning dressing per package directions. Combine all of the ingredients and shake until well combined.
Corn on the Cob: My trick is to add butter and sugar to the boiling water for an extra dose of sweeteness!
Thursday: Grilled Chicken Thighs with Garlic Parsley Potatoes and Broccoli
Chicken: Combine like 2tbs olive oil, 3tbs dijon mustard, 1tbs of ground mustard, salt, pepper, paprika and oregano. Spread over both sides of chicken and let sit for a little bit before throwing it on the grill.
Potatoes: Boil mini red potatoes until cooked through. Rough chop the potatoes, add 1/2 stick of butter, salt, pepper, garlic powder and chopped parsley and mix together. These are my FAVE!
Friday: General Tso’s Chicken & Fried Rice
Chicken: Recipe from Just A Taste
Fried Rice: Prepare some white rice per usual. Chop up some garlic, onions, carrots and broccoli. Saute veggies in olive oil over medium-high heat for about 5mins. Add rice to veggies and mix to combine. Add soy sauce and sesame oil – stir to coat. Clear some space in the center of the pan and crack an egg into it. Scramble the egg with a fork and cook until done. Mix the egg into the rice, add more soy sauce if you’d like and serve!
