You guys, I have never received more DMs for a recipe than when I shared this one last week in my Instagram stories! And I get it! Its SO easy to make, peaches are in season and its SOOOOOO freakin’ good! I cannot however take credit for the recipe, its courtesy of Sylvia over at Feasting At Home! I discovered Sylvia via an article on The Everygirl and quickly started pinning ALL the recipes! I had to give this one the spotlight though bc its THAT good!

ingredients
1tsp chili powder
1tsp cumin
1tsp paprika
1/2 tsp cayenne pepper
1 tsp sea salt
2lbs bone-in, skin-on chicken thighs
1/2 cup shallots, sliced thin
2 large peaches, cut into 1/2 in wedges
2 limes, juiced
2tbs olive oil
1tbs honey
2tbs cilantro, chopped
instructions
Preheat oven to 400 F.
In a small bowl mix all the spices minus the salt.
Season both sides of chicken generously with sea salt.
Coat and rub all sides of the chicken with the spice mix.
Heat olive oil in a skillet over medium to medium-high heat and sear the chicken, skin side down until deeply golden. Get that skin crispy! Turn and sear another 2 minutes then place chicken on foil-lined sheet pan in the oven and let it cook through – about 35mins!
To the same skillet, over medium heat add the shallots. Saute stirring often until tender about 3-4 minutes. Add the peaches. Gently saute for 2 minutes, turning them over after they just begin to soften and caramelize. Squeeze with the juice of 1 lime and drizzle with honey. Stir carefully with the goal of keeping the peaches intact. Once they are heated thru, leave on super low until the chicken is done.
to serve
Plate the chicken, squeeze lime juice over top. Spoon peaches and shallots on top and squeeze some more lime juice and garnish with cilantro.
