Ask and you shall receive! My Instagram followers asked for a meal plan for this week and a meal plan you’re getting! I am SO over Christmas leftovers right now, but I am in the mood for some winter comfort foods. It’s freakin’ freezing here in NJ so my mind immediately went to soup, chili, homemade breads, etc. PLUS I snagged a Lodge cast iron dutch oven at Home Goods today so I’m excited to put it to work!
If you’re new here, I share my own personal recipes as well as recipes I find from food blogs I love to follow. I don’t always follow the recipes exactly, I like to take “liberties” with most of them. I think that’s the easiest way to start cooking – follow a recipe, make adjustments, experiment a bit to see what works and what doesn’t and HAVE FUN with it! Cooking should be fun y’all! Ok, I’m done blabbering for now, here’s this week’s meal plan:
Monday: Creamy Tortellini Vegetable Soup with No Knead Bread

Bread Recipe via Half Baked Harvest
Tuesday: Creamy Balsamic Mushroom Chicken Marsala with Roasted Potatoes and Broccolini
Chicken Recipe via Half Baked Harvest
Roasted Potatoes: Cubed potatoes and toss in olive oil, sea salt, pepper, minced garlic and chopped rosemary. Cook in the air fryer at 400 for 20-25 minutes.
Broccolini: Toss broccolini in olive oil, sea salt and pepper and roast at 375 for 15 minutes. Sprinkle with locatelli before you serve.
Wednesday: No Bean Turkey & Sweet Potato Chili with Browned Butter Jalapeno Cornbread Muffins
