Another week, another meal plan!
This week’s meals are all gluten-free and dairy-free (or I’m making adjustments to them so that they are). Mike has recently gone GF/DF to combat some inflammation and health issues and is finding relief from it, so I’m trying to be as supportive as possible. I’ll note on each meal what adjustments I’m making for anyone who’s interested.
Sunday: Seafood Gumbo with Jasmine Rice

Tuesday: InstantPot Pasta e Fagioli with Gluten-Free Bread
Pasta e Fagioli Recipe via HalfBaked Harvest
*subbing GF pasta and not adding the parmesan rind – i’ll add parm on top of mine tho!*
GF Bread Recipe via Flour On My Face
*subbing cassava flour for all-purpose flour and hoping for the best! haha!*
Wednesday: Honey Balsamic Air Fryer Chicken Thighs, Roasted Sweet Potatoes & Broccoli
Chicken recipe via Cookin’ Canuck
Roasted Sweet Potatoes Recipe: cube potatoes and toss in olive oil, sea salt, pepper, minced garlic and chopped rosemary. Cook in the air fryer at 400 for 20-25 minutes.
Roasted Broccoli Recipe: toss broccoli in olive oil, sea salt and pepper and roast at 375 for 15 minutes. Sprinkle with locatelli and red pepper flakes before you serve.
Thursday: Korean Beef Rice Bowls
