I’ve been into 2-in-1 dinners lately to cut down on cooking time, still provide a healthy dinner and have plenty of QT with the kids afterwards. They make meal planning easier and cut your grocery bill as well!
What is a 2-in-1 dinner? You pick a main ingredient and build two dinners off of it. Told you, quick and easy!
This week, I picked Pork.
I got a family pack of bone-in pork chops and made all 8 of them on Saturday night. I simply seasoned them with salt and pepper and sautéed them for about 5mins on each side until browned and cooked to desired doneness.
My first dinner with this was Pork Chops with a mushroom glaze over brown rice and grilled asparagus on the side.

Then on Monday, I sliced the leftover pork into thin strips for my second dinner: Pork Ramen Stir-Fry.
