I’m back for our second week of meal plans and I love how much you guys loved last week’s plan! If you can follow a recipe, you can make anything I share in these lineups – promise! Monday: Keto Chicken Parm Meatloaf with Salad

Tuesday: The Best Chicken You’ll Ever Eat with Cauliflower Rice and Broccoli
Chicken: Recipe from Well Fed by Mel Joulwan // Cauliflower Rice: I buy plain, frozen cauliflower rice and saute it with olive oil, salt, pepper and some garlic powder. // Broccoli: I just boil a bag of frozen broccoli and season with butter, salt and pepper.
Wednesday: Crockpot Pork Chops with Peppers, Olives and Potatoes

Thursday: Pastelillos with Salad
Pastelillos: I saute ground beef and season it with some salt, pepper, garlic powder, onion powder, paprika, oregano and whatever else I’m in the mood for. Place some meat on half of a frozen Goya disc and add some shredded cheese if you’d like too! Fold the one side over and seal with a fork. Throw them in the air fryer at 370 for 8 minutes, flipping halfway through. You CAN make the dough yourself, but the Goya discs are TOO easy, but if you wanna go all out, I found this video on youtube with a good tutorial
Friday: Steak & Cheesy Bacon Potato Hash Foil Packs

I actually made this on Sunday night, but we’re going out on Friday night so I won’t be cooking at home.
