Kicking off the first Monday of the year with my meal plan for this week!  Meal Planning is a necessity for me in order to keep our eating on track, to stay on budget and to keep me trying new recipes bc this gal LOVES to cook!  I shared a very long while back how I meal plan so I highly recommend checking that post out if you are new to meal planning!

I have been incorporating a lot of keto recipes into our week since the hubs has been trying to stick to a keto diet and I’ll usually just add some additional sides for me and the boys since we’re not about that keto life.  I do have to say though, the recipes I’ve tried have been amazing!

As I said in this post, I get most of my recipes from my recipe box and my pinterest board, but I’ve also been loving the recipes my friend Kara has been sharing in her keto facebook group!

Ok, NOW I’m done blabbing, here’s this week’s lineup:

Monday:  Air Fryer Chicken Thighs with Mixed Vegetables

Chicken: From Skinnytaste // I have this airfryer // Mixed Vegetables: I just buy frozen mixed vegetables, boil them and season with butter, salt and pepper.

Tuesday: Crockpot Picadillo over Cauliflower Rice

Picadillo: From Skinnytaste // Cauliflower Rice: I buy plain, frozen cauliflower rice and saute it with olive oil, salt, pepper and some garlic powder.  I use leftover picadillo over a salad for lunch or in quesadillas for a snack for the boys.

Wednesday: Buffalo Chicken Meatballs over Zoodles

Recipe: From The Ketosis Mama

Thursday: Keto Pesto Chicken with Garlic Parsley Potatoes and Green Beans

Chicken: From The Ketosis Mama // Potatoes:  I boil small red potatoes until cooked, then drain, rough chop them up and mix with a healthy dose of garlic powder, salt, pepper, half a stick of butter and chopped parsley. // Green Beans: I just boil a bag of frozen green beans and season with butter, salt and pepper.

Friday: Cheesesteaks and Fries

Cheesesteaks: I buy shaved beef and saute it with salt, pepper, garlic powder, onion powder and italian seasoning.  Cut open torpedo rolls and place under broiler for a few minutes.  Once beef is cooked, put it in rolls, top with two slices of your favorite cheese and throw it back under the broiler to melt it.  (Feel free to saute some onions, mushrooms and/or peppers to throw on them too!) // Fries: In the air fryer from this recipe.

Saturday: Pot Roast with Mashed Potatoes and Sugar Snap Peas

Pot Roast: Put an oven bag in a roasting pan and sprinkle 1/4 cup flour in the bag.  Get a 4-5lb bottom round roast and cut slits in the roast (6-8 slits).  Slice up some garlic and put it into the slits of the roast.  Combine some salt, pepper, onion powder, paprika,  italian seasoning and dry mustard powder with 1/4 cup water.  Mix it well and pour over the roast.  Cook at 325 for 2-2.5 hours.  // Mashed Potatoes: Potatoes: Boil potatoes for about 20 minutes (or until done), I like to use yukon gold or butter potatoes.  Drain and return to pot. To start, add half a stick of butter, about a 1/2 cup of milk and season with salt and pepper.  Mix with stand or hand mixer until smooth, adding more milk if needed.  //  Sugar Snap Peas: I just boil a bag of frozen sugar snap peas and season with butter, salt and pepper.

Note: I actually made the Pot Roast on Sunday, but we’re going out to eat on Saturday night so I added it there bc its TOO good not to share!  Sundays are usually for Italian, pasta, comfort food, let’s just say we indulge with a hearty Sunday dinner… The Italian in me cannot stand to not go big on Sundays, even after a crazy morning at church!
