Hey guys, Happy Labor Day!!  The kids are heading back to school this week (well, kinda) so I figured a meal plan was VERY necessary! The first week of school can bring chaos, especially if you’re in a hybrid or full-remote model, so why not follow a meal plan to relieve some of the overwhelm?

Monday: Sheet Pan Balsamic Basil Chicken Cauliflower Rice Bowl

Tuesday: Taco Tuesday!

I make a variety of hard and soft tacos plus some rice and beans, corn and occasionally some nachos too!

Wednesday: Whole Chicken in the Crockpot with Quinoa and Asparagus

Rinse chicken, pat dry and season with salt, pepper, garlic powder, onion powder, paprika and oregano. Halve a lemon and an onion and shove inside the chicken along with a handful of thyme. Place in the crockpot and cook on low for 8 hours. You don’t need any liquid in the crockpot. This chicken will fall apart, its SO freakin good and the leftovers are great for lunches!

Thursday: Pot Roast, Mashed Potatoes, Green Beans and Biscuits

I love using these oven bags when I make meatloaf or pot roast – they help tremendously with cleanup! Ok so for my pot roast, I combine an envelope of Lipton Onion Soup mix and 3/4 cup water. Place 3-4lb top round roast into oven bag, pour soup mix on top. You can also throw some onions and carrots in there (potatoes too!). Close bag, poke a few small holes on top and cook at 325 for about 3 hours or until desired doneness.

Friday: Steaks, Baked Potatoes & Broccoli
