I don’t know about you, but there’s nothing grosser than soggy cauliflower rice! I was so turned off by cauliflower rice for the longest time, but it wasn’t until I roasted my cauliflower rice that I actually like it now! Even better, I do it with FROZEN cauliflower rice!

Ingredients:

1 bag frozen riced cauliflower (the plain kind!)
1tbs olive oil
garlic powder, oregano, sea salt, fresh ground black pepper

Directions:

Preheat oven to 400. Break up the frozen rice in the bag so there are no clumps of frozen rice. Spray your sheet pan with olive oil and spread rice on sheet. Drizzle with olive oil and season with salt, pepper, garlic powder and oregano – and any other spices you’d like! (Be generous with your seasoning). Roast for 25 minutes, stirring about halfway through. Rice should be golden in color and there should be no water left on the pan. If so, keep roasting until its gone.

Voila! Super easy, super tasty and no more nasty, soggy cauliflower rice! Cauliflower rice is a great no-carb side for any protein and perfect for my E2M Meals!
