I love kicking off a new month with a meal plan! It just makes me feel like I have my crap together, anyone else?? This week is a little busy for us and we’ll be up in NYC for the day on Tuesday, so we’re doing takeout on a weeknight – we usually save eating out for the weekend, but I just know that the last thing I’ll feel like doing is cooking after a long day! Ok, enough blabbering, here’s this week’s meal plan:
Monday: Sheet Pan Chicken Pitas with Tzatziki
Chicken Recipe via Pinch of Yum
Tuesday: Takeout
Wednesday: InstantPot Braised Beef with Rice & Roasted Broccoli
Beef Recipe via Skinnytaste
Roasted Broccoli: toss broccoli in olive oil, sea salt and pepper and roast at 375 for 15 minutes. Sprinkle with locatelli and red pepper flakes before you serve.
Thursday: Balsamic Garlic Crusted Pork Tenderloin with Steak Fries and Asparagus

Friday: Meatloaf, InstantPot Mashed Potatoes & Green Beans
Meatloaf Recipe: Shared previously HERE
Mashed Potatoes: place metal trivet into InstantPot and add a cup of water and some salt to the bottom of the pot. Add 7-8 medium potatoes (peeled and quartered) over the trivet. Cook on high pressure for 10 minutes and quick release. Remove trivet and add 1 cup warm milk, a few tbs of butter, salt and pepper and whip potatoes with hand mixer.
