The food aspect of E2M can be hard for a lot of people, but after completing my first round, I’ve found a few meals that are my go-to lunches. The goal is to make it easy – leftovers are a great option for your first meal of the day! I always cook extra proteins when making dinner to have on hand for the next day. I also like to food prep by cutting a bunch of veggies and putting them in snack bags – grab and go is KEY!
So besides putting together whatever proteins, fats and veggies I have on hand or going with eggs bc eggs are easy peasy, here are a few E2M lunch ideas that I love!
Egg Roll In A Bowl
Egg Roll In A Bowl is an E2M fave by all and what I love about it is that I can make a huge batch of it and portion it out for many meals! I love putting hot sauce on top for an extra kick too! You can find my Egg Roll In A Bowl recipe HERE
Whit’s Tuna
Everyone talks about Whit Chick, but I personally prefer it with TUNA! There’s something about canned chicken that skeeves me, but I really love it with tuna. (I understand how ridiculous this might sound, I know). All you do is take a can (or packet) of tuna, drain it, add half a mashed avocado and some Trader Joe’s Chili Lime Seasoning. (You can use any seasoning you’d like, but this one’s my fave!). I eat it with sliced cucumbers and red peppers and its so SO good!
Crispy Chicken Salad
This one’s easy too and SO yum! Throw together a salad with whatever veggies you like and top it with some cashew crusted chicken cutlets (you can find my recipe HERE) – for dressing, you can do lemon juice, lime juice, hot sauce or yellow mustard. PS: the cashews are your healthy fat in this salad. If you use grilled chicken, you can add avocado, olives or nuts for your fat.
