We’re officially in our seventh week of quarantining and our eating habits are starting to change… a bit.  I’m leaning towards less comfort food and adding in some lower carb options on some nights.  Not all of them, we still need some carbs around here – the boys wouldn’t have it any other way!

Monday: Steaks & Sprouts

I use this marinade for our NY Strip Steaks: 
1/4 cup balsamic vinegar
¼ cup orange juice
2tbs olive oil
2 cloves garlic, smashed
handful of fresh parsley, chopped
1/2tsp red pepper flakes
sea salt + pepper
mix all ingredients for marinade together, pour over steaks + let marinate for about an hour

halve sprouts, toss in olive oil and sea salt and roast at 400 for 25-30mins.  Drizzle with balsamic reduction, salt and pepper.

Tuesday:  Food Cart-Style Chicken

Wednesday: BBQ Wrapped Meatloaves with Mashed Potatoes and Broccoli

Recipe from Skinnytaste – these are a big fave in our house!

Thursday:  Pork Chops, Rice and Beans and Green Beans

Pork Chops:  Combine dijon mustard, olive oil, garlic powder and Italian seasoning.  Season chops with sea salt and pepper then smother chops in marinade.  Bake at 350 for 30-35mins or until cooked through.

Rice & Beans: I use my mother-in-law’s recipe, but here is one I found on Pinterest thats similar

Friday:  Keto Beef & Broccoli
