If you’ve been following me on Instagram for awhile, you know that I am OBSESSED with my air fryer!  Seriously, best purchase ever.  I was super skeptical if I needed one or not, but I use it SO much and so do the boys – it makes frozen chicken nuggets super crispy and air fryer bacon is straight up amazing!  Anyways, when making dinner the other night, it was raining out so grilling the chicken was not an option, so I pulled out the good ol’ air fryer!  It cooks chicken SO quickly and its still juicy inside!

With that, we’re in the thick of summer, so I’m trying to use what’s in season when I cook.  I added peaches to our dinner HERE and I figured, why not have some fun with strawberries??  After browsing Pinterest for ideas, I made my own version of strawberry salsa comprised of a few different recipes I found.

Ingredients:

4 skinless, boneless chicken thighs
Adobo seasoning
3 cups strawberries, chopped
1 jalapeno, seeded and minced
1/4 red onion, chopped
1/2 cup cilantro, chopped
1 lime, juiced and add a little zest
1/4 tsp sea salt

Directions:

Prepare the salsa first.  Combine strawberries, jalapeno, onion, cilantro, lime juice and sea salt.  Mix and set in fridge until ready to serve.

Season chicken thighs with Adobo.  Season it WELL all over.
Spray air fryer basket with olive oil, add chicken and spray the top of the chicken with olive oil.  Cook at 400 for 14 minutes, flipping at the 7 minute mark.

When chicken is done, spoon salsa on top and voila!  Easy peasy dinner!  I served ours with some roasted asparagus and rice and beans.
