Like I shared in last week’s meal plan HERE, Mike has gone gluten and dairy free to see if it would help with some of his inflammation and pain issues and two weeks later, he’s definitely noticing a difference!

One thing I found out in sharing this on my Instagram stories is that a LOT of people are gluten-free and/or dairy free due to health issues! Who knew?? These people have also been a HUGE help in finding gluten-free, dairy-free substitutes so THANK YOU if you are reading this!

Since I try to be a supportive wife, I’ve been making gluten-free and dairy-free dinners for our family…. while shoving cheese in my mouth in hiding, ha! I do have to say though, I am quite impressed with the options out there! I find that most of my favorite food bloggers (Skinnytaste, Halfbaked Harvest) have categorized a ton of gluten-free, dairy-free recipes to make it easier for their readers too!

So here are a few gluten-free, dairy-free dinner recipes that we have been loving:

Air Fryer Salmon with Maple Soy Glaze | I am NOT a salmon fan, but Mike and the boys are and loved this! We skipped the rice, but had a TON of roasted broccoli on the side – the best way to prepare it in my opinion!

Winter Pomegranate Salad with Maple Candied Walnuts | we had this with steak and it was SO good! We skipped the goat cheese (dairy) on this and let me tell you, Cara Cara Oranges are SO good!! One of my new fave fruits to eat lately!

Mushroom Al Pastor Tacos with Garlic Lime Special Sauce | Mike was VERY suspect of these, but quickly changed his mind when he tasted them! They have SO much flavor – I barely noticed I was even eating mushrooms! We skipped the cheese and I subbed Kite Hill’s dairy-free almond milk Greek yogurt. ALSO, I made Cassava Flour Tortillas instead of corn tortillas and it was def worth it! (see below)

Cassava Flour Tortillas | Ok, these were SO good and really easy to make! Mike actually preferred them to the typical corn tortillas! They are sturdier without being tough and don’t rip open while eating. You can make a bunch and save them for lunches too – highly recommend! I used Otto’s Naturals Cassava Flour

Sheet Pan Korean Chicken Bowls with Sweet Potatoes & Yum Yum Sauce | This one was a WIN! SO MUCH FLAVOR and please, don’t skip the garnishes, they round out the dish so well! This recipe is def going into our regular rotation! Again, I subbed a dairy-free almond milk Greek yogurt on this one too!

Gluten-Free, Dairy-Free Crusty Bread | My husband loves him some bread and after somebody highly recommended Bob’s Red Mill Gluten Free All-Purpose Flour, I figured, let’s just toss it in my favorite Rosemary & Olive Oil Bread recipe and see what happens? What happened was magic! Mike literally yelled in excitement when he tasted this bread bc it actually tastes like regular bread! WIN! SO yeah, I put the same exact amount of the gluten-free flour for the all-purpose flour and it all worked out!

So there you go, some Gluten-Free, Dairy-Free Recipes we’ve been loving lately! I am in no means an expert on the topic, just figuring it out as we go!
