While I naturally lean to a lot of Italian cooking, I like to explore other cuisines as well. One that we really love is Greek! I’m a huge fan of lamb, hummus, gyros, all of it! So I toyed with the idea of a Greek Meatball this weekend and I’m a HUGE fan! They’re very easy to make and are SUPER yummy on the grill – one way I’d never prepared them before! Don’t skip the yogurt sauce either, its a MUST! I served mine with some garlic roasted potatoes, green beans, a greek salad and olives and feta on the side, of course!
** NOTE: I know some people are not a fan of lamb, so you can substitute your favorite ground meat in this recipe. I think these would work great with ground turkey! **
Ingredients
Yogurt Sauce:
1 cup nonfat greek yogurt
1/2 lemon, squeezed
2-3 cloves garlic, minced
1/2 sprig rosemary, minced
salt and pepper
Meatballs:
2lbs ground lamb
1/2 onion, chopped
4-5 cloves garlic, minced
2 sprigs of rosemary, minced
handful of parsley, minced
1 egg
paprika, 1tbs
oregano, 1tbs
salt and pepper (be generous)
Directions
Combine greek yogurt, lemon juice, garlic and rosemary. Stir until smooth. Season with salt and pepper and chill until ready to serve dinner.
Combine all ingredients and form into meatballs. Since we’re grilling these, make them big. Grill over medium-high heat until cooked through, 10-15 minutes, flipping halfway. If you prefer your lamb medium, cook for a shorter amount of time.
