Mike and I love asparagus, but the boys have a love/hate relationship with it. They don’t like it mushy or stringy and there’s a fine line when cooking asparagus where it goes from crisp but cooked to mushy and stringy. After messing around with a bunch of different ways to make asparagus (roasted, grilled, in the air fryer), this one was the winner!

Think crisp but cooked asparagus swimming in fragrant, crunchy garlic and toasted almonds. Its so stinkin’ good and the perfect side for any dish! Even better? Its clean, dairy-free and whole 30 friendly!

Ingredients:

1 bunch asparagus, cut into thirds
4-5 cloves garlic, sliced lengthwise
1/4 cup sliced almonds
olive oil
salt and pepper
red pepper flakes

Directions:

I heat 2tbs olive oil over medium heat in my Always Pan. Add garlic and saute for a minute or two until it begins to brown, then add in asparagus and season with salt and pepper and a pinch of red pepper flakes. Stir the asparagus as it cooks until it begins to soften a little. Mix in the sliced almonds for the last few minutes it cooks. The asparagus should be cooked and hold its shapes, but still have a little bite and not mushy at all…. if that makes sense!
